I Like Big… Salads and I can not lie.

I love salads, I love veggies, I love the colors, the way they make me feel, the way they can be transformed.  There is so much to love. I am slightly famous (to roughly 17 people) for my Big A$$ salads.  At work coworkers would joke that I had made a salad to share and then ate it all.  All of these salad pictures are from work, I love seeing my big beautiful salad surround by usual hospital food junk.  If I can make time to make this salad on my 30 minute lunches on a unit without a lunch room, you can do it ANYWHERE!  I would prep ingredients for multiple salads and then assemble them in my glorious green bowl at work.



The secret to these salads is the dressing.

Avocado oil (or whatever oil you prefer)

Apple Cider Vinegar

Organic Dijon Mustard

Salt

If I’m feeling fancy I’ll add some basil and/or lemon. Sometimes I’ll use a bit of my fire cider to spice things up. Put you ingredients in a jar, a little more oil than vinegar. Shake it real good and then dip a piece of lettuce in to taste it. So easy and amazing.





For my Big A$$ salad I add whatever sounds good sometimes adding all of these ingredients. All local and sustainably grown if you can afford it, organic is second best (although organic is slowly becoming meaningless), and conventional if it’s all you can find.

Carrots

Onions

Bell Peppers

Avocado

Cucumbers

Berries

Seed mix (hemp, pumpkin, sunflower and chia)

Raw Sauerkraut

Olives

Microgreens

Protein = tuna salad, chicken or steak.






Get creative and have fun.

The greens and veggies are full of vitamins and minerals, plus they are bright and alive and they make me feel bright and alive.

The sauerkraut and dressing give a good dose of probiotics and help stabilize blood sugar.

There are plenty of healthy fats in the dressing, avocado, seeds, and my tuna salad. Remember fat is our friend! We need fat and cholesterol to make progesterone, we need proGESTerone to GESTATE our babies. It is key to finding hormone balance.

The seeds have so many benefits, but I love to mention pumpkin seeds because they are naturally deworming, and spoiler alert you might have worms.

I encourage you to add a salad to your daily life and see how it makes you feel. If your body is like mine it will love it! Some bodies don’t and you’ll have to do more experimenting to figure out what your body needs. Or maybe you’ll need a little time to adapt to a veggie filled life.

I get asked all the time how do I get my kids to eat their veggies, it’s really simple they eat them because we eat them.
